This article will walk you through creating a custom answer file for your Office 2007 (it is the same process for 2010) installation and then delivering that via a zip payload within a Managed Installation:

As far as getting rid of Office XP, check out the Un-Installer Wizard within the Scripting>Configuration Policy module.
