I have worked in a number of environments where virtualization has been heavily leveraged. The locations that have opted for HyperV have often been smaller shops, or organizations looking to save a bit of money. 

In my own opinion, HyperV has closed the gap significantly. Much of the features that enterprises look for are included in HyperV whereas in VMWare there is still a significant cost.

Bottom line, every environment is different. HyperV is effectively just a checkbox away. VMware requires a bit more effort. Both are rather effective visors - youll need to spend some time with each in order to form a strong opinion.

It depends on which features are important to you.  In some cases Hyper-V works best for an organization, other companies find VMWare to fill their needs better.  Your mileage may vary, I would suggest you prepare two similar lab environments where you can test each and select the one that best suits your needs.
