Run "setup.exe /admin" and this will bring up a GUI that lets you customise the installation (enter product key, set options etc, set display mode to hidden). Once you have configured it, click File -> Save and then save the MSP file in the same location as the setup.exe.
Now from your deployment tool (SCCM etc) you can just run "setup.exe /adminfile YourMSPFileName.msp"

To install Service Pack 1, download it from here:
Run visio2010sp1-kb2460061-x86-fullfile-en-us.exe /extract, and choose a folder.
Grab the .msps from the extract location (don't copy the .xmls) and put them in the Updates folder of your installation point. As SP1 includes all previous updates, you can delete all the existing msps from the updates folder, except for any customization msps you have created. SP1 will then be applied during the initial installation.
By default, if you're using the Key Management Server, Visio gets installed as Premium by default. To install Visio Pro or Standard, you have to specify a KMS Client Key in the Office Customization Tool.
Details are in this TechNet article (way down towards the bottom)

To install a alternate version of Visio 2010, use a public KMS key (see "LINKS") in your OCT tool.
